Why this size?
Discord's help says desktop chat shows a sticker at 160 by 160 display points, so it asks for 320 by 320 exactly: twice that, to stay sharp on high density screens.
An emoji is more forgiving. Discord's uploader lets you crop and zoom as you add one, but the file still has to be under 256 KB.

A passport size has been the same for decades.
A platform's recommended image size can change in a product update nobody announces, which is why every size here shows the date somebody read it at the platform's own help page rather than presenting it as timeless.

Why your photo gets cropped
Platform sizes are shapes as much as sizes, and a photograph is rarely already that shape.
The box is filled and the overflow comes off the long edges evenly, because the alternative is stretching the picture and a stretched face is the one result nobody wants.
If the centre is not the part you want to keep, open the crop tool, drag the frame to the right region, and come back. The crop stays applied while you set the size.
What happens to your photo?
Your selected photo is processed in your browser, without an image upload to a server. The page may download code and codecs needed for editing.

Common questions
What size should a Discord emoji be?
Discord's own guide to custom emoji says 128 by 128 is just right, though bigger or smaller will work. Its help page says the file must be under 256 KB.
The help page lists JPEG, PNG, GIF and WEBP, and the guide adds AVIF. PNG is the one to keep here, because it keeps a transparent background.
What size is a Discord sticker?
Exactly 320 by 320 pixels, under 512 KB. Discord's Tips for Sticker Creators names PNG for a still sticker and APNG for an animated one, and no other file type.
Fill as much of the square as you can. Discord shows the sticker at half that size in desktop chat.
Will my file fit under 256 KB or 512 KB?
At these sizes it will. A 320 by 320 image with transparency holds 409,600 bytes of pixels before any compression, well short of 512 KB.
A 128 by 128 emoji holds 65,536 bytes, a quarter of the 256 KB limit. So neither PNG needs its quality lowered to fit.
Can I make an animated emoji or sticker here?
No. This tool saves one still image, and an animated GIF dropped here keeps only a single frame.
Discord takes an animated emoji as a GIF under the same 256 KB, and an animated sticker as an APNG under 512 KB, at up to 60 frames a second.
How do I give an emoji or sticker a transparent background?
Keep the PNG output. An image that already has a see-through background keeps it.
For a photo, choose Remove background in the editor above, then Transparent. The subject is cut out on your device and the rest of the square is left clear.
How many emoji and stickers can a server have?
Discord's Server Boosting FAQ gives every server 50 emoji and 5 sticker slots. Boost level 1 raises them to 100 and 15, level 2 to 150 and 30, and level 3 to 250 and 60.
Discord's Tips for Sticker Creators still says custom stickers come through boosting, but its sticker FAQ also gives every server 5 free.
